I love watermelon–by itself, on salads, as a popsicle flavor; anything. When I buy a watermelon though sometimes I do not know what to do with all of it. I always feel like there’s too much, but I HATE throwing out good food. This recipe uses a lot of your fresh watermelon, and is just so refreshing and delicious. I could drink this all day. It lasts in the refrigerator for about 2 days, probably longer if you put it in an air-tight container.
Yield: 6 cups
What you’ll need: Either a NutriBullet, blender, or something equivalent.
-3 cups watermelon, cubed
-4 cups water
-3 packets Truvia or other sweetener (if you prefer)
Place the watermelon into the NutriBullet and let it blend until completely pulverized; seeds and all. Add the watermelon juice to a pitcher containing 4 cups of water. I stirred in the Truvia packets to add some sweetness, and let it chill in the refrigerator for about 20 minutes before drinking. Make sure you stir the juice before serving, as it tends to separate.
